Brem’s Chicken Stew (One of our favorites)

1 large Fryer – cut up                                1 quart hot water or homemade stock
1 ½ tablespoons cooking oil                ½ pound sliced mushrooms
¼ cup all purpose flour                        ½ cup chopped parsley
1 large onion, chopped                        ½ cup chopped green onions
½ cup chopped celery                        1-2 teaspoons garlic, chopped
½ cup chopped green/red bell pepper
Spices:
Salt, cayenne  & black pepper                

Cooking Directions:

Heat oil in heavy pot.  Wash & towel dry chicken.  Brown chicken pieces in hot oil; remove chicken from pot.  

*Set aside 4-5 tablespoons of renderings in pot (gradue).  

Add flour to oil. Stir roux constantly – until golden brown.  

Add chopped celery, onion, and bell pepper; sauté until clear. Return chicken to pot. Stir, gradually adding hot water
or stock.  

Bring to a boil; add salt & pepper.  

Simmer 1 ½ to 2 hours; add mushrooms, green onions, and parsley.  

Cook until chicken is tender but still intact.  

Season to taste.  

Serve over rice or pasta.
